Remove water from a specified juice stream

Juice concentration by vacuum evaporation

An evaporation package supplies heat to the prepared juice, separates the generated vapor and discharges concentrate at the required condition. The selected configuration joins heat-transfer surfaces, vessels, pumps, vacuum and cooling services into one concentration process.

Choose the heat-transfer arrangement for the juice condition

A falling-film arrangement distributes liquid over heating surfaces for evaporation under the selected pressure. Film distribution and operating flow matter as the solids content changes.

A forced-circulation arrangement moves product through a heater before the evaporation and separation stage. It may be considered when viscosity, solids or deposit behaviour call for that circulation duty. The product range, rather than the exterior shape of a vessel, determines the appropriate selection.

Start with the required ingredient, then establish water removal

Feed mass flow and the concentration change establish an initial material balance. Record the concentrate and water-removal duties separately, then account for additional streams or losses appropriate to the selected process.

A volumetric juice rate needs the density at its stated temperature and concentration before use in a mass balance. A whole-fruit intake rate is further upstream and cannot stand in for the evaporator feed. The required outlet concentration is an ingredient specification, not one fixed value for all pomegranate products.

Assess the product through the concentration run

Temperature exposure, residence and vapor handling affect the resulting ingredient. Compare colour, aroma and the agreed composition under representative operating conditions rather than treating vacuum alone as proof of quality retention.

Allow access to circulation pumps, valves and heat-transfer sections for service. Cleaning must cover the actual deposit locations and flow paths. The concentrate outlet then connects to the selected treatment and packaging route; evaporation alone does not establish shelf life.

Questions about this equipment and process

Does adding more effects guarantee a specific steam saving?

Utility demand depends on the concentration duty, feed temperature, operating range and the selected heat-recovery arrangement. Compare energy figures only on the same stated product and utility basis.
