Juice treatment

Treat the juice for its intended product

Centrifugal clarification, membrane separation, air removal, concentration and thermal treatment perform different jobs. Start with the required juice character and packaging route, then select the operations that serve it.

Choose a suspended-solids profile

Cloudy and clarified juice call for different separation decisions. Compare a disc clarifier, filter-aid route or ultrafiltration using representative feed and the required outlet condition.

Clarification methods may be alternatives. Do not assume all three should be installed in sequence without a defined reason.

Coordinate air, residence and thermal duty

A vacuum deaerator removes selected air from a liquid under defined conditions. It does not replace thermal treatment or determine the finished product shelf life.

A tubular thermal package must be selected with the product and downstream filling conditions. Define the validated treatment schedule separately; there is no universal pomegranate time-and-temperature schedule.

Separate juice throughput from evaporation duty

When producing concentrate, establish feed and target soluble solids, liquid behaviour and water-removal duty. These are different from a press capacity or a juice-flow specification.

Coordinate the evaporator, buffer vessels, pumps and utilities. Compare concentrate quality through the representative operating run, including deposits, viscosity and cleaning.
